What better way to kick off 2023 than with a recipe for a delicious treat that meets all the summer holiday requirements: it's a breeze to make, there are minimal ingredients, needs no fancy gadgets, is vegan-friendly, requires no oven and it's perfect for warm weather.

This ice cream recipe is coconut cream based, and there are a few reasons why I chose to go this route:

• Coconut cream produces a rich, creamy ice cream without needing to make an egg custard that is the base of traditional ice cream. That custard base needs a lot of time and attention, whereas this coconut based ice cream is a simple blend-and-freeze affair.
• It's vegan friendly, lactose free and gluten free, so more people can enjoy it. 
• I wanted to give you a recipe that's easily made with a few pantry staples. Most of us have a tin or two of coconut cream in the cupboard, along with maple syrup or sugar.
• No ice cream machine needed. You don't even need popsicle moulds!

​The other elements are simple and few: we need to add a sweetener as well as flavouring ingredients.There are a couple of optional add-ins - xanthan gum and oil. These two ingredients are by no means essential, but they help give the ice cream a slightly creamier consistency: they also stop the ice cream from going completely rock hard, which makes for easier scooping or slicing.​
