Even though Christmas is still months away I've been thinking about quick party snacks that are delicious and simple to make. I love almonds and I love maple syrup and I know this is a great combination.

I've come up with two simple ideas to try and both worked out to be very delicious.

Maple Chia Almonds

Ingredients
1 cup of Raw Almonds
1 tbs Maple Syrup
2 tbs Chia Seeds

Method
  1. Preheat oven to 180 /160 C.
  2. In a bowl mix together the almonds, chia seeds and maple syrup.
  3. Spread across a line baking tray and place in the oven for 20 - 25 min, stirring half way through.
  4. Cool on tray before breaking apart any that have stuck together.

You can sprinkle a little sea salt over when they come out of the oven if you like the sweet/salt combo.

Store in an air tight container for up to 2 weeks.

Maple Tamari Almonds

Ingredients
1 cup Raw Almonds
1 tbs Organic Tamari
1 tbs Maple Syrup

Method
  1. Preheat oven to 180/160 C.
  2. Toast the almonds for 5 min in the oven then remove and allow to cool a little.
  3. In a bowl mix the almonds, tamari and maple syrup.
  4. Place on a lined baking tray. Keep them separate from each other.
  5. Place in the oven for 15 min, stirring halfway through trying to keep them separate.
  6. Remove from oven and quickly place them on a clean piece of baking paper to cool. They are               very sticky at this point. Don't be overly concerned if the all stick together. Once cooled they can be separated.
Store in a airtight container for up to 2 weeks.

My son seem happy when I called. He eat a lot of food and everyone had been taking care of him. I guess it's about time I accept defeat. I am a bad mother. I am not winning but it's not my fault. I am going to pursue my freedom for now so eventually I can heal and be a better person next time I see him. It's going to hurt but I am not surprised that some people were right. I wish I learned this earlier so I can make some adjustments. I don't want to be far away from my son.
