These are a delicious and nutritious treat and being nut free makes them great for the school lunch box as well.

I've made two different types but you can change out the ingredients to suit your tastes. The possibilities are endless.
Linseed, Chia and Coconut

Ingredients
1 cup Rolled Oats
150g Premium Dates
2 tbs Raw Cacao Powder
1/3 cup Desiccated Coconut
1/3 cup Linseed Meal
1/3 cup Chia Seeds
2 tbs Maple Syrup
1 tbs water
extra Coconut to coat

Method

  1. Place oats, dates, cacao, coconut, linseed meal, chia seeds, maple syrup and water into a food processor and process until smooth. You can add a little extra water at this point if it feels a bit dry.
  2. Place extra coconut on a plate. Take a dessert spoonful of mixture and roll it into a ball. Roll the ball in the coconut.
  3. Place into the fridge for 1 hour to set. Can be stored in the refrigerator for up to 2 weeks in an airtight container.
